bright, fresh and fruit-driven, made with a blend of sustainably grown, aromatic varieties that require minimal intervention in the vineyard. The grapes were pressed under nitrogen to retain their delicate flavours, with a proportion fermented in neutral oak to add complexity. Secondary fermentation was completed in tank using the Charmat Method, making this wine one of the first of its kind produced in England. This vibrant sparkling white is full of fresh lemon and pear. A crisp palate of melon and green apple lead to a bright finish, making it the perfect aperitif.

Ripening in mid October lends a pale, lemon gold hue to the wine.

The nose shows elderflower, nettle, lime flower and a hint of rose petal too. These aromas flow onto the palate to be joined with grapefruit and lemon skin notes, and just a hint of melon and nectarine fruit too. Finishes clean, crisp and dry.

A palate of honey, almond, pastry and baked apples gives it a hint of decadence. 85% of this wine was fermented in stainless steel to preserve the unique aromatic qualities of this variety. The rest was fermented in a 500 litre oak puncheon to build structure and length. This is a naturally soft and elegant wine with a subtle floral nose but also has a savory, saline edge. The palate has a moreish quality because of the soft acid profile and elegant almost feather light feel, with the saline finish really drawing you back to have another glass. This wine seems to get better every time I try it. Being the first iteration it’s difficult to say how long it might go on for but if balance is the key to longevity then this has it in abundance.
