It has been produced by the classic method of fermentation in the bottle, where very long ageing on the lees adds to the complexity of the flavour. This sparkling wine has a wonderful freshness, resplendent with green fruits but gentle on the palette.

Royal Sovereign Rosé is a dry, crisp rosé with a vibrant cerise colour made from hand-harvested Rondo grapes grown in the Tamar Valley. The wine has hints of strawberries, raspberries and summer fruits. Royal Sovereign was one of the most popular strawberry cultivars grown in Tamar Valley market gardens during the first half of the twentieth century.

Josef Chromy is one of Tasmania's most famous influential wine figures, having owned and developed some of the state's most prominent wineries, including Rochecombe (now Bay Of Fires), Jansz, Tamar Ridge and Heemskerk vineyards. In 2007 he established the winery that would bear his name, which quickly became one of Tasmania's leading wine producers.
The Pinot Noir 2023 showcases an abundance of deep red berry fruits, accompanied by notes of cinnamon spice and subtle oak toast. On the palate, it delivers a rich and generous experience with dark red fruits, supple tannins, and a smooth, lingering finish.
