This wine is also Zero Dosage and crafted from selected hand-picked Chardonnay & Pinot Blanc grapes gently pressed to extract the highest quality cuvee juice. A portion of the juice underwent primary fermentation in large French new oak barrels with subsequent prolonged lees contact in barrel prior to blending.
After secondary fermentation this wine enjoyed 44 months or more on-lees maturation in bottle, all of which has helped to create a beautifully balanced and elegant Sussex sparkling wine with layers of complexity, great poise and length.
On the nose the wine offers aromas of pear, peach and apricot complimented by a touch of brioche.

The Nightjar reserve pinot noir is made using grapes sourced from Clayhill Vineyard in Essex. The wine is matured for a total of 36 months prior to release, 24 in barrel and 12 in bottle, gaining texture and complexity allowing the potential of this wine to shine through. An off-dry English sparkling wine with refined fruit character. It has a pale golden hue with a steady stream of tiny bubbles.
Floral aromas of almond blossom and honeysuckle dance on the nose, with fragrant stone fruits including yellow nectarine and quince. It has the scent of summer meadows alongside attractive aromas of freshly baked shortbread and sweet brioche. The palate is off-dry with honeyed fruit, sweet apple compote and stewed medlar. It has a wonderful creamy mousse and a silky texture as smooth as panna cotta.
There are hints of frangipane and bakewell tart with a tasty layer of sweet almond paste running through it. It has balancing acidity to counteract the sweetness so the result is exquisitely off-dry with a lingering finish.
Perfect for celebrations such as christenings or a baby shower, or simply enjoy it with afternoon tea. Serve well-chilled in a flute alongside sweet canapés such as mini strawberry short-cake or individual fruit tarts. Also good with creamy fruit desserts such as summer trifle or panna cotta with a red berry coulis. Each year 400kg of fruit were whole bunch pressed and allowed to ferment spontaneously. In 2021 the fermenting juice was added to the existing base wine and bottled when the correct sugar level was reached. No additions were made at any point during the process. Disgorged with zero dosage.
