While Pinot Noir is traditionally used in sparkling wine, Seyval Blanc has become a go-to English preference for sparkling production. Pinot Noir and Seyval Blanc at Melbury Vale ripen about the same time and are checked for sugar levels that are ideal for sparkling. This wine is a pale coral pink color with fine bubbles typical of a high quality English sparkling wine. On the nose there are aromas of fresh summer berries and meadow flowers, and on the palate there are bright notes of ripe strawberry, watermelon, and lime zest.
