The latest release of our highly successful Classic Cuvée Brut that was originally released in 2019, and sold out quickly.
This new release is made from grapes from the excellent 2019 and 2020 vintages. Made from a blend of 50% Chardonnay and 50% Pinot Noir, secondary fermentation in bottle followed by 24 months gaining complexity on lees. The wine therefore benefits from some lovely bottle age and is ready to be enjoyed now. 12% ABV.

A delightfully elegant dry English sparkling wine with good potential for ageing. It has a pale golden straw colour with lots of minute bubbles.
Delicate floral aromas of hawthorne and acacia blossom mingle with nutty notes of crushed hazelnuts and blanched almonds. There are also wonderful aromas of freshly baked brioche and Italian pandoro on the nose alongside melon and ripe pear. It has delicious ripe orchard and stone fruit on the palate with aromatic coxes apple, white peach, yellow nectarine and greengage, plus a touch of zesty grapefruit, waxed lemon and Cape gooseberry.
Additional subtle nutty flavours blend with a hint of oat-biscuit on the palate. It is dry with a nice creamy mousse and slightly saline structure underpinned by a lovely acid balance giving freshness and great length which is ideal for ageing, so it has plenty of life ahead of it.
Serve this dry sparkling wine well-chilled in a flute as an aperitif paired with smoked salmon blinis with lemon crème fraîche, or herby goats cheese on croutons. An excellent accompaniment for a seafood platter with oysters, whelks and crustaceans. Also good with flat fish such as lemon sole, plaice, brill or turbot. Enjoy it with cold poached salmon served with a lemon mayonnaise dressing, or asparagus with hollandaise sauce.

With passion and purpose Red Hut was launched and embodies the spirit of New Zealand, they are inspired by the iconic red huts that shelter adventurers. This Central Otago Pinot Noir has aromas of cherry, redcurrant and thyme are underpinned by hints of rose petal and subtle spice. Fine tannins frame the vibrant red fruit, savoury undertones and a touch of earthiness from the whole bunch. The wine presents a clear deep ruby colour with rich aromas of blackcurrant and morello cherries with hints of vanilla, prunes, and spice - pepper, coriander and cloves and a smokiness reminiscent of lapsang southong tea.
The wine is medium bodied with moderate tannins with smooth, subtle tannins and with notable freshness with a long finish.

Pelegrim means Pilgrim in middle English (circa 12th century) and recognises the history of our forbears who walked the Pilgrim's Way above our vineyard for centuries on their final leg to Canterbury.
Pelegrim NV is a traditional bottle-fermented sparkling wine that is made from Pinot Noir, Pinot Meunier and Chardonnay with reserve wines from previous vintages to give further complexity and a consistent extra dry non-vintage style. The wines are lees-aged in bottle for 36 months to give depth and biscuity aromas which only bottle-fermentation can deliver.
