Our signature kombucha, citrus cascade, gets most of its delicate flavour from our wonderful green teas but we also add cascade hops during the primary fermentation adding a citrusy note.
We brew using a bespoke blend of green teas from some of the best tea plantations in China, all ethically traded by our partners at rare tea company. They only work with farmers using organic principles who don’t use chemical pesticide or herbicides.
Our Kombucha is brewed and barrel-fermented in our nano brewery situated on Nania’s Vineyard in central Bristol, we have perfected a can-conditioning process and hand-can our kombucha in small batches. We make an authentic kombucha that is RAW and alive inside. It’s very much the real deal and we’re so confident in the provenance of our brew that we offer a S.C.O.B.Y guarantee. English-grown Bacchus grapes produce aromatic, fresh and crisp wines similar in style to Sauvignon Blanc but with their own distinctive aroma profile.
As is typical of the varietal, our 2022 Bacchus is pale, with a crisp light mouth feel and recogniseable aromatic complexity.
The diversity of aromas can range from herbaceous (tomato leaf, basil, sage, nettle, asparagus, grassy) to citrus (lime zest, lemon, grapefruit) to tropical fruit (medlar, mango, passionfruit) to floral (elderflower, honeysuckle) with the intensity ranging from punchy and intense to more subtle and elegant.
Our style of Bacchus aims for intriguing aromatic complexity and subtle elegance which we believe the 2022 delivers in abundance.
More about the Bacchus grape
The variety originated in Germany in the 1930’s as a cross between Muller-Thurgau and Silvaner x Riesling which has helped contribute to its complex nature. In order to enhance this complexity and build ‘terroir-character’ into our wines we blend multiple unique batches picked on different dates, split into different press fractions and fermented with different yeasts.
Food Match Suggestions: The crisp acidity and freshness makes Bacchus perfect as an appetising aperitif wine. It also pairs beautifully with English asparagus or goats cheese as well as seafood such as dressed shellfish or stronger flavoured salads such as Caesar or rocket.
