This wine is also Zero Dosage and crafted from selected hand-picked Chardonnay & Pinot Blanc grapes gently pressed to extract the highest quality cuvee juice. A portion of the juice underwent primary fermentation in large French new oak barrels with subsequent prolonged lees contact in barrel prior to blending.
After secondary fermentation this wine enjoyed 44 months or more on-lees maturation in bottle, all of which has helped to create a beautifully balanced and elegant Sussex sparkling wine with layers of complexity, great poise and length.
On the nose the wine offers aromas of pear, peach and apricot complimented by a touch of brioche.

The word Bulari is derived from the Latin word Bullarum, meaning bubbles. The Cotswolds, in which the Poulton Hill Estate is located, is steeped in Roman history, with the Roman town of Cirencester close by.
A beautiful pale gold in appearance, this Bulari has a vibrant nose of freshly cut green apple and pear with citrusy notes of orange peel, lemon and hints of lime zest. A single vineyard blend of Seyval Blanc and Pinot Noir. On site at Melbury Vale Vineyard we have one block of established Seyval Blanc vines and one block of established Pinot Noir vines. While Pinot Noir is traditionally used in sparkling wine, Seyval Blanc has become a go-to English preference for sparkling production. Pinot Noir and Seyval Blanc at Melbury Vale ripen about the same time and are checked for sugar levels that are ideal for sparkling. This wine is a pale coral pink color with fine bubbles typical of a high quality English sparkling wine. On the nose there are aromas of fresh summer berries and meadow flowers, and on the palate there are bright notes of ripe strawberry, watermelon, and lime zest.
Food Pairings: Dorset shellfish dishes, smokey pulled pork, and with cake after tea.
