An off-dry English sparkling wine with refined fruit character. It has a pale golden hue with a steady stream of tiny bubbles.
Floral aromas of almond blossom and honeysuckle dance on the nose, with fragrant stone fruits including yellow nectarine and quince. It has the scent of summer meadows alongside attractive aromas of freshly baked shortbread and sweet brioche. The palate is off-dry with honeyed fruit, sweet apple compote and stewed medlar. It has a wonderful creamy mousse and a silky texture as smooth as panna cotta.
There are hints of frangipane and bakewell tart with a tasty layer of sweet almond paste running through it. It has balancing acidity to counteract the sweetness so the result is exquisitely off-dry with a lingering finish.
Perfect for celebrations such as christenings or a baby shower, or simply enjoy it with afternoon tea. Serve well-chilled in a flute alongside sweet canapés such as mini strawberry short-cake or individual fruit tarts. Also good with creamy fruit desserts such as summer trifle or panna cotta with a red berry coulis. Fermented in a mixture of stainless steel and oak at cool temperatures using selected Burgundy yeast strains to enhance complexity, stone fruit, floral characters and minerality. Post-fermentation there was full malolactic fermentation and extended fine lees ageing with some bâtonnage to accentuate the natural weight.
A late dry spell in 2021 allowed us to hang the fruit for as long as possible to ensure we attained peak physiological ripeness for our house style. The Chardonnay 2021 is a blend of aromatic and non-aromatic chardonnay fruit sourced from a collection of growers in Essex where the microclimate and soil allow the grapes to achieve excellent ripeness, harvested between 31st October and 7th November 2021.

This wine is made from a small parcel of Stanlake Park’s Pinot Noir grapes, enabling an extraordinary balance between freshness and fruitiness.
Made with handpicked grapes, a short maceration on the skins extracts a delicate colour, with fermentation taking place at a cool temperature in stainless steel tanks to retain freshness. Released after only a few months of maturation. Unfiltered, so a small deposit can occur in some bottles – this is totally natural and harmless.
Keep horizontally in a dry and dark place, away from heat, sunlight and vibrations.
