2022 was an exceptional year vintage at Ashling Park, representing our best red wine fruit of the year. Aged in French and American oak barrels for almost one year, giving structure, complexity and depth. Dark Cherry, Blackberry and subtle oak notes make this perfect at the table with a wide range of fine foods.

Our medium bodied Laurel Red is a velvety blend of Rondo and Pinot Noir.

This Central Otago Pinot Noir has aromas of cherry, redcurrant and thyme are underpinned by hints of rose petal and subtle spice. Fine tannins frame the vibrant red fruit, savoury undertones and a touch of earthiness from the whole bunch. A blend of 70% Seyval Blanc, 16% Pinot Blanc and 15% Pinot Gris with fresh aromas of crisp, green apple and a hint of lemon meringue. This is all harmoniously balanced with the sugars, acidity and effervescence leaving the mouthwateringly fresh flavours to linger on the palate.

A single vineyard blend of Seyval Blanc and Pinot Noir. On site at Melbury Vale Vineyard we have one block of established Seyval Blanc vines and one block of established Pinot Noir vines. While Pinot Noir is traditionally used in sparkling wine, Seyval Blanc has become a go-to English preference for sparkling production. Pinot Noir and Seyval Blanc at Melbury Vale ripen about the same time and are checked for sugar levels that are ideal for sparkling. This wine is a pale coral pink color with fine bubbles typical of a high quality English sparkling wine. On the nose there are aromas of fresh summer berries and meadow flowers, and on the palate there are bright notes of ripe strawberry, watermelon, and lime zest.
Food Pairings: Dorset shellfish dishes, smokey pulled pork, and with cake after tea.

It has a lively pour and excellent clarity. Citrusy and fresh with notes of peach, apricot, apple pastry, and minerality freshness with white florals on the nose. The traditional method provides a touch of cream and brioche-like savouriness.

This is quite possibly the best sparkling wine that we’ve made so far. The 2018 combines the richness of our 2013 and the depth of 2011 a balance that gives the best of both worlds. The wine is pretty much equal quantities of Chardonnay , Pinot Noir and Pinot Meunier with 15% Reserve Wine from previous vintages going right back to 2010 .
It was disgorged in late 2023after four years on the lees. It still has plenty of room for development and will continue to improve for five or more years.
