The palate is dry and lively, showing flavours of green apple, lime zest and tropical citrus. On the nose, bright citrus aromas intertwine with delicate floral notes and a whisper of toasted almond, hinting at its partial oak cask aging (46%) alongside stainless steel (54%). The absence of malolactic fermentation preserves the vibrant acidity (8.8g/L), complemented by a touch of residual sugar (5.9g/L) that enhances the wine’s texture without compromising its finesse.
On the palate, Paragon is a symphony of precision and complexity. The wine delivers crisp green apple, lemon zest, and a chalky minerality, rounded by a subtle creaminess from oak influence.
