On the nose, enticing aromas of wild strawberry and redcurrant are enhanced by peach melba, nectarine and kumquat. Appealing flavours of rosehip, redcurrant and whitecurrant dance on the palate with a touch of ruby grapefruit. Partially hand de-stemmed and foot crushed, left on skins before a wild fermentation.
Unfiltered and unfined with no sulphur added at any stage.
Tasting: Think of an English Summer day; a nose of elderflower, citrus fruit with a hint of peach, buttery toasted almonds and a well balanced acidity. Dry to off dry. Best served slightly chilled, and to let the wine fully open up don’t return it to the fridge.
