he 2019 Blanc de Noirs is an almost equal blend of Pinot Noir and Meunier at 51% and 49% respectively, with a small addition of 3% reserve wine.
It was bottled in September 2020 and disgorged in November 2023, thus spending more than our minimum of three years on lees for our sparkling white wines. It has now spent over a year on cork, which has given us confidence, after tasting of course, that it is in a sweet spot and ready to be released and enjoyed.

The wine presents a lemon/light gold colour, a generous bouquet of ripe pear, peach, honeydew melon, grapefruit and hints quince followed by well-defined and complex fruit characteristics, fresh crisp acidity and minerality with plenty of character on the palate.
100% Alsatian Clone Pinot Blanc, the grapes from our vineyard were handpicked, and pressed in October. After low temperature fermentation to accentuate the thiol aromas the wine was left in tank over winter but not allowed to go to malolactic fermentation, the juice was very clear and required minimal fining and developed a splash of fruits and flavours of fruit with crispy acidity.

This site, defined by its chalk and flint soils, gives wines that are bright and elegant, with power, structure and a crystalline quality. This example has bright citrus, alongside orchard fruit, melon and a mineral note.
Tasting note In the glass, this is light straw in colour with a delicate mousse. On the nose, this has strawberry, peach, and peach melba notes. Owned by the Deniau family, Domaine des Vaublins has been a family winery for several generations. Since 2020 the Domaine is in the hands of the current generation Nicolas and Alexandrine, and together with Cedric Allion they are making some excellent wines under his watchful eye. Their 16 hectares of vines are located on the clay and limestone hillsides on the banks of the river Cher.
This Sauvignon Blanc showcases a golden hue adorned with green undertones, displaying impeccable clarity and remarkable depth. Its nose is a one of complexity, boasting exquisite fruit notes of citrus, particularly grapefruit, alongside captivating mineral undertones. Upon aeration, the minerality takes centre stage, reminiscent of gunflint, intertwining gracefully with the hints of freshly squeezed lemon entwined with the essence of white fruit, pear, and green apples. The minerality gracefully intertwines with powerful fruit flavours, most notably peach.
