Partial ageing in oak followed by 42 months on lees gave the 2017 vintage a concentrated, textured palate of red apple, brioche and umami... The well-balanced red fruit sweetness comes from 34 g/l of sugar offset by 10g/l of acid with more weight and hazelnuts on the finish. Moreish and long.

Fermented on skins for three weeks and aged in a mix of both new and aged American and Hungarian oak barrels for twelve months. Aromas of vanilla, cinnamon and hints of white pepper spice. Made from our organic Pinot Noir from the Redmoors vineyard, planted in 2016. It is a light red wine with typical varietal aromas of the grape variety, soft balance, complex with red berry fruit and great length of flavour. A whole berry ferment with 50% whole bunches included, aged in large oak vats for 9 months and then has a further 12 months maturing in the bottle.
