When we decided we wanted to make sparkling wine we also wanted to make our mark. We looked at all the fantastic offerings in the English sparkling wine category and decided to make our sparkling wine in a different way.
Using the Charmat method, a production technique favoured by many Italian and German producers of quality sparkling wine, we were able to produce a different style of wine giving a more fruit driven, easy drinking and approachable style.

Crafted from hand-destemmed, foot-crushed Phoenix and Seyval Blanc grapes grown on our Jurassic Coast vineyard, this low-intervention wine showcases our unique terroir. Wild fermentation, malolactic fermentation, cold curing over winter, and bottle fermentation create delicate frizzante bubbles.

Cielo e Terra has dual roots in the Veneto region: the Cielo family and the winemakers of the Cantine dei Colli Berici. The Cielo family’s bond with the land dates back to 1908 in the Vicenza countryside, near the Castles of Romeo and Juliet, where the great-grandfather had bought Casa Defrà, a small farm with a vineyard. They enjoy making wines with passion and innovation to create signature versions of traditional Italian wines, looking for the right balance between personality and easy-drinking.
This wine reveals a delicate light pink hue, reflecting its fresh and vibrant character. The bouquet is lively and persistent, offering inviting fruity aromas with notes of pineapple and strawberry. The fruit was harvested by hand from our own vines and a parcel from Martin's Lane Vineyard in the Crouch Valley, Essex. To express the complexity of the Bacchus grape, we use a multitude of techniques that respect both the traditional and more novel methods of winemaking.
