Our Bacchus may contain Tartrate crystals, also known as wine diamonds, which are harmless, naturally occurring crystalline deposits that form in wine when tartaric acid and potassium bind together.

A sparkling wine of unparalleled elegance, Paragon Blanc de Blancs showcases the purest expression of Chardonnay from the Upper Levels vineyard. Made exclusively from premium clones (95, 121, 76, and 131), this limited release of just 3,535 bottles is a testament to meticulous craftsmanship.
On the nose, bright citrus aromas intertwine with delicate floral notes and a whisper of toasted almond, hinting at its partial oak cask aging (46%) alongside stainless steel (54%). The absence of malolactic fermentation preserves the vibrant acidity (8.8g/L), complemented by a touch of residual sugar (5.9g/L) that enhances the wine’s texture without compromising its finesse.
On the palate, Paragon is a symphony of precision and complexity. The wine delivers crisp green apple, lemon zest, and a chalky minerality, rounded by a subtle creaminess from oak influence. The finish is long and refreshing, with a delicate interplay of fruit, acidity, and structure that invites another sip.

Blend: 55% Pinot Noir, 31% Pinot Meunier, 14% Chardonnay
Wild Rose Sparkling Rosé captivates with its delicate wild-rose pink hue, exuding elegance and complexity. On the nose, vibrant aromas of ripe red berries intertwine with subtle floral nuances.
The palate is a delightful balance of freshness and bright fruit, with luscious notes of strawberries and raspberries complemented by a soft, creamy texture, a result of partial malolactic fermentation. This harmonious interplay concludes with a beautifully long, refined finish.
Aged for a minimum of 22 months on lees and rested an additional six months on cork post-disgorgement, this sparkling rosé demonstrates exceptional maturity and finesse.
Wild Rose shines alongside sashimi and maki rolls, enhanced by the salty tang of soy sauce and the zing of fresh ginger. It also pairs effortlessly with charcuterie boards and cheese platters. 85% of this wine was fermented in stainless steel to preserve the unique aromatic qualities of this variety. The rest was fermented in a 500 litre oak puncheon to build structure and length. This is a naturally soft and elegant wine with a subtle floral nose but also has a savory, saline edge. The palate has a moreish quality because of the soft acid profile and elegant almost feather light feel, with the saline finish really drawing you back to have another glass. This wine seems to get better every time I try it. Being the first iteration it’s difficult to say how long it might go on for but if balance is the key to longevity then this has it in abundance.

New release! This is the latest release of our best-selling Rosé Brut from the successful 2022 vintage. This release is made exactly in exactly the same style - albeit a little lighter in appearance - from a blend of 50% Chardonnay and 50% Pinot Noir and having spent over 18 months on lees.
Pale salmon in colour with an abundance of fine bubbles, the wine has notes of strawberry, some blood orange, summer citrus freshness with a little creamy nougat on the nose. The freshness continues into the palate with some lightly bready notes and a little some summer fruit salad. Reminiscent of a summer day with the sun going down, this is the perfect aperitif or paired with with light starter dishes. ABV 12%.
