85% of this wine was fermented in stainless steel to preserve the unique aromatic qualities of this variety. The rest was fermented in a 500 litre oak puncheon to build structure and length. This is a naturally soft and elegant wine with a subtle floral nose but also has a savory, saline edge. The palate has a moreish quality because of the soft acid profile and elegant almost feather light feel, with the saline finish really drawing you back to have another glass. This wine seems to get better every time I try it. Being the first iteration it’s difficult to say how long it might go on for but if balance is the key to longevity then this has it in abundance.

Showing a good balance between its light body and delicate bubbles, it is bright, slightly golden in colour with a good effervescence. A vibrant English sparkling wine with bright citrus notes and crisp freshness. It has a medium lemon colour and fine delicate bubbles. As its name suggests this wine is made of selected base wines from multiple vintages to produce an approachable and immediately enjoyable style. Others call this style ‘non-vintage’ – we just prefer the name ‘multi-vintage’! The blend of this wine will vary slightly each year in order to maintain a consistent style, but it will typically be a combination of Chardonnay, Pinot Blanc, Pinot Noir or Pinot Meunier and will undergo 3 years on-lees ageing.
Generous and soft on the palate, this wine is open and expressive, exhibiting delightful panettone-like aromas of sweet baked bread, dried apricots, nuts and candied citrus peels.

It boasts a lovely, delicate pink colour with fragrant red berry aromas and a touch of spice. Fresh and fruity with rich flavours of cherries and blackberries and a wonderfully rounded and complex palate.
This wine is the perfect aperitif but will also be a fantastic match with a baked trout fillet with lemons. A real treat for a dinner party!
This is the eighth release of our best and most acclaimed sparkling rosé wine. Made with 100% Pinot Noir grapes which were lovingly hand picked from our Monkshatch plot at the end of the first week of October 2019.
Two thirds of the grapes were crushed and destemmed and soaked for two hours prior to pressing to obtain the lovely light ‘salmon pink’ colour before fermentation in stainless steel tanks.
One third of the grapes were whole bunch pressed with the base wine (using only the Cuvée) fermented and aged in used oak barrels. Both batches went through malolactic fermentation.
