During the summer months "Chilli" may join you in the court yard to enjoy some summer sun, a few cuddles and of course to see what delights you are enjoying from the on-site food truck! Every year to pay homage to this special lad we name a wine after him (which of course he chooses!!) and this year is his delicious "Chilli Cat Cuvee", cheers "Chilli".

Ashdown Boundary Block is made from 100% Merlot grapes. Aged in old oak barrels for 19 months. Light to medium bodied with a ruby to garnet hue. On the nose aromas of plum, blackcurrant, blackberry, almond, rhubarb, Cherry Bakewell and vanilla leading to flavors of cooked cherries, black currant jam, vanilla, cranberries and blackberries.
It is smooth with a good length. Its tannin structure is well balanced and delicate, while still delivering an intense and complex taste. A blend of 60.5% Pinot Noir, 37% Chardonnay and 2.5% Pinot Meunier, made in the Saignée method, this intensely coloured wine is bled off following contact with the skins. Saignée sparkling rosés often have deep colours and powerful, complex flavour profiles.
The nose immediately draws you in, with wild strawberries and macerated red berry flavours that recall the very ripest red berries of the summer. There are also hints of cherry shortbread and winter spice.

Made entirely from our own grown Pinot varieties, this wine is a mix of 45% Pinot Noir (mix of clones), 40% Pinot Noir Precoce and 15% Pinot Meunier. With our warm summer of 2022 the result is an intoxicating aroma of red summer fruit produce.
On the mouth the first taste is distinctly of ripe raspberries and loganberries followed by pomegranate and perhaps some red currant. The wine leaves a smooth and rounded finish. This is well balanced and a delight to drink on a summer’s afternoon – with or without food!
