Ashdown Boundary Block is made from 100% Merlot grapes. Aged in old oak barrels for 19 months. Light to medium bodied with a ruby to garnet hue. On the nose aromas of plum, blackcurrant, blackberry, almond, rhubarb, Cherry Bakewell and vanilla leading to flavors of cooked cherries, black currant jam, vanilla, cranberries and blackberries.
It is smooth with a good length. Its tannin structure is well balanced and delicate, while still delivering an intense and complex taste. Enjoy this wine with roast beef, mushroom risotto, or game dishes. Well-balanced acidity and medium body create a crisp, lively texture that carries to a refreshing finish. This is a perfect and exact blend between Pinot Noir, chosen for its red fruits aroma, its body, depth of flavour and fullness, and Pinot Meunier, our favourite, for its aromatic sweetness, a lush fruitiness and the capacity to acquire the roundness of age comparatively rapidly. The Pinot Noir grape provides the back-bone of our wine, whilst the Pinot Meunier lends softeners and orchard fruit aromas. A beautifully rich golden colour as well as an intense nose with red fruit aromas, such as red cherry, cranberry and redcurrant, are enticing us to take a first sip. A hint of strawberry lingers in the background. A creamy, full mouthfeel contributes to a very long finish. Ideal served on its own as an aperitif or try it alongside a quiche Lorraine or Parma ham.

A demi-sec is created at dosage stage with extra sugar blended with the base wine. The wine has had 36 months on its yeast lees and then a further 6 months on cork in cellar.
