A truly individual wine. Ten barrels of pinot noir from the 2019 vintage demanded to be bottled as a special release. Powerful on the nose with notes of forest floor and red cherry more typical of a red pinot than sparkling. Oak fermentation and ageing lend the wine spice and structure on the palate.

Across a range of Kentish clay and chalk soils, only the best Chardonnay from Balfour’s top vineyards are found in this stunning wine. This vintage Blanc de Blancs from the fabulous 2018 harvest is only the third to be produced by Balfour in its 20-year history. A style which requires the very best conditions and ripest of fruit.
Tasting Note: Brilliant white gold, with a fine sustained bead and mousse. Clean and fresh with a touch of autolysis, white pepper and dried herbs.
Winemaker’s Food Pairing: Fish and chips or oysters. Is also a great match with Tunworth cheese.

2022 was an exceptional year vintage at Ashling Park, representing our best red wine fruit of the year. Aged in French and American oak barrels for almost one year, giving structure, complexity and depth. Dark Cherry, Blackberry and subtle oak notes make this perfect at the table with a wide range of fine foods.

This Court Garden Ditchling White is a delicious blend of Chardonnay, Pinot Gris, Pinot Blanc and Ortega. The varieties were fermented and aged in stainless steel to retain the clean aromas and soft fruit notes and then blended to create this delicious single-vineyard estate white wine. This is a light medium bodied dry wine. There are aromas of apple, grapefruit, lime and stone fruits, as well as tropical fruits on the palette and a clean fresh finish. A subtle oxidative style of sparkling wine produced in the traditional method and matured on the lees for 20 months. We have built more complexity into the base wine, maturing in French oak and on the lees prior to bottling, which offers up a more savoury style of English sparkling wine.
The colour has an amber hint in the glass and aromas of baked red apple, sultana, caramel and lemon rind. The palate is dry and has flavours of red apple and toasted baking spice, with a focussed acidity, soft lees tannin and delicate mousse.
