This is quite possibly the best sparkling wine that we’ve made so far. The 2015 combines the richness of our 2013 and the crisp fresh side of 2014 a balance that gives the best of both worlds. The wine is pretty much equal quantities of Chardonnay , Pinot Noir and Pinot Meunier with 15% Reserve Wine from previous vintages going right back to 2010 .
It was disgorged in late 2019 after four years on the lees. It still has plenty of room for development and will continue to improve for five or more years.

A stunning new addition to our collection, Old Oaks is a Phoenix-based sparkling wine crafted using the traditional bottle-fermentation method, with 12 months of aging on its lees. It entices the senses with delicate floral aromas, complemented by notes of brioche and white stone fruits.
On the palate, the wine delivers a luxurious, creamy mousse balanced by bright, refreshing acidity. Perfectly versatile, this sparkling wine pairs beautifully with canapés and blue cheese, making it an exceptional choice for celebrations.
The name Old Oaks pays homage to the ancient oak tree that stands sentinel by our Doehole vineyard, symbolizing our commitment to sustainability. A nod to our regenerative farming practices and the Pocket Rainforest project is proudly featured on the label, with proceeds supporting our dedication to land stewardship.

This elegant wine boasts a light straw hue with delicate aromas of lemon zest, orange peel, and honeysuckle. On the palate, green apple and brioche are complemented by a hint of marzipan, culminating in a well-balanced, seamless finish with a fine, persistent mousse.
The 2019 vintage began with abundant sunshine, a record-hot Easter, and a warm, wet summer. Despite challenges, careful vineyard management yielded clean, flavourful grapes. The blend includes 11% barrel-fermented wine and 12% aged reserve wines, with four years on lees for added complexity. Perfect for celebrations, it pairs beautifully with canapés and laughter. A multi-vintage red wine made from grapes picked from our “Cricket Field” vineyard in different years to achieve a great balance of flavour and structure. Aged in old and new oak barrels to obtain spicy hints, a smooth body, and a persistent finish.

Foxbury Fields Bacchus is a pale lime green aromatic dry white wine. The wine offers complex aromas of elderflower layered with Kiwi, grass and a herbal overlay. Well balanced with length on the palate this is a classic English Bacchus.
Created in 1933 by viticulturalist Peter Morio by crossing Silvaner x Riesling with Muller-Thurgau varieties to create a grape that produces a fine white wine. Originating in Germany, Bacchus has increasingly been grown in the United Kingdom. The climate being colder means the grapes tend to have increased levels of acidity compared to their German counterparts, giving a new flavour take on a classic German grape by keeping the flavor from becoming too intense or sugary.
