Confit lemon, orange blossom and white lily exude on the nose, nestling amongst ripe apricot, white peach and baked red apple. The palate intensifies, evolving into tarte Tatin, almond croissant and a dusting of crumble, yet maintaining a precise structure, creamy texture and mouth-watering acidity.
The finish develops a mineral, chalky quality, nodding to our Hampshire terroir, and the svelte mousse remains persistent and elegant. Incredibly complex and immensely enjoyable.

A pale red Pinot Noir, the colour is deceptive, not revealing the powerful red fruits hidden within. Full of wild red fruit characters on the nose, the palate is soft, with intense red cherry and gentle spice from the time spent on oak. The perfect red for summer, ideal with a BBQ.
Winemaker's Notes: Just the ripest Pinot Noir was used for this light red. The grapes were crushed and fermented partly in tank and partly in barrel. Throughout the ferment regular pump overs were conducted to extract a little more colour and weight. The oaked proportion of the blend then spent a further 12 months in oak before being bottled.

Wild Rose Sparkling Rosé captivates with its delicate wild-rose pink hue, exuding elegance and complexity. On the nose, vibrant aromas of ripe red berries intertwine with subtle floral nuances.
The palate is a delightful balance of freshness and bright fruit, with luscious notes of strawberries and raspberries complemented by a soft, creamy texture, a result of partial malolactic fermentation. This harmonious interplay concludes with a beautifully long, refined finish.
Aged for a minimum of 22 months on lees and rested an additional six months on cork post-disgorgement, this sparkling rosé demonstrates exceptional maturity and finesse.
Wild Rose shines alongside sashimi and maki rolls, enhanced by the salty tang of soy sauce and the zing of fresh ginger. It also pairs effortlessly with charcuterie boards and cheese platters. Torri Cantine, producers of organic wine in Abruzzo for 60 years, has always made the respect for nature and for the land its priority. The radiant vine-covered hills of Torri Cantine express an infinite variety of scents and all the colours of the earth warmed by the sun. The Torri Cantine vineyards extend over 60 hectares in the municipalities of Colonnella, Controguerra and Torano, in the province of Teramo, from 100 to 300 meters above sea level. The favorable climatic conditions and the generous soil, together with the patient and scrupulous work in the vineyard and in the cellar, have made it possible to obtain wines of great value.
Colour is bright yellow, with a nose full of white flowers and light sensations of fruitness. Fresh, dry and lightly bitter at the end. Lovely with every seafood dish and cold pasta.

NECTAR FROM A DIFFERENT HECTARE
As if we didn’t know well enough how tiny our vineyard is, the wine this time comes from another family owned estate; of 250 hectares! Perez Cruz Reserva Cabernet Sauvignon 2018 is an absolute belter.
This unique eco-friendly winery is found in the Maipo Andes in Chile and, as much as we are seen as rosé specialists, so they are considered red experts. This region, at around 500m above sea level, is considered to be one of the most sought after areas to grow Cabernet Sauvignon. As ours are, their vines are trained on a double guyot system and have a long ripening season eventually being harvested by hand. The big difference is that, in the middle bit, they get plenty of sunshine!
A bit of an ‘under the radar’ wine, this has intense ripe red fruits with sweet vanilla (it spends a year in oak), black pepper, wild herbs and figs. The palate is creamy and concentrated with enough grip for food but the balanced acidity and soft tannins are also perfect for a liquid supper watching a movie in front of the fire. Perfect wine for roast dinner. It’s vegan friendly too….
