50% semi-carbonic maceration using a fruit-forward yeast strain and 50% crushed fruit using a classic Burgundian yeast.

The 2018 Element 20 is made solely from Chardonnay fermented, and aged in 2- to 5-year-old French oak barriques for 12 months and left on full lees prior to bottling in September.

We don't normally produce single variety white wines, but when something is of this quality and so typical of the grape variety, the temptation is sometimes too much.
The 2023 Ortega is made from our oldest organic vines, planted in 1991. It has a mineral earthy style with aromas of yeast and fruit. Ideal with white fish, but also a pleasure to drink on its own.

Our ever-popular Pet Nat is back! A purely natural wine, fermented by natural yeasts with no added sulphites. It is a light, refreshing, slightly cloudy sparkling wine and is absolutely the perfect summer drink. We bottled during harvest while the wine was still frementing, keeping a light fizz in the bottle. It has a slight yeast sediment adding a great yeasty edge to the fruit aromas. The wine will gain yeasty aromas as it ages.
This is a natural wine in every way and is difficult to make, so we only use the best grapes available to us that we know will end up with the right flavours and balance in the wine.

Josef Chromy is one of Tasmania's most famous influential wine figures, having owned and developed some of the state's most prominent wineries, including Rochecombe (now Bay Of Fires), Jansz, Tamar Ridge and Heemskerk vineyards. In 2007 he established the winery that would bear his name, which quickly became one of Tasmania's leading wine producers.
A vibrant nose of zesty lemon, lime, and kaffir lime leaves, complemented by subtle hints of roasted fennel and bay leaves. The nose brims with ripe morello cherry, bramble fruits and raspberry alongside sweet spice, milk chocolate and toasted notes. On the palate, there are bold, ripe, dark fruits of plum and blackberry with juicy strawberry and red cherry. The wine is beautifully balanced with structured, silky tannins and a long, precise finish.
