This is the sixth release of a Still Sauvignon Blanc at Greyfriars and quite possibly our best yet.
It is an intense, dry and wonderfully aromatic white wine, with an elegant bouquet expressing a perfect mix of elderflower, gooseberry and greengage.
Fresh and zippy with ripe gooseberry fruit on the palate leading to a delicately herbaceous finish reminiscent of fresh garden peas.

A truly individual wine. Ten barrels of pinot noir from the 2019 vintage demanded to be bottled as a special release. 50% semi-carbonic maceration using a fruit-forward yeast strain and 50% crushed fruit using a classic Burgundian yeast.

When we decided we wanted to make sparkling wine we also wanted to make our mark. We looked at all the fantastic offerings in the English sparkling wine category and decided to make our sparkling wine in a different way.
Using the Charmat method, a production technique favoured by many Italian and German producers of quality sparkling wine, we were able to produce a different style of wine giving a more fruit driven, easy drinking and approachable style.
