Aged for a minimum of 22 months on lees and rested an additional six months on cork post-disgorgement, this sparkling rosé demonstrates exceptional maturity and finesse.
Wild Rose shines alongside sashimi and maki rolls, enhanced by the salty tang of soy sauce and the zing of fresh ginger. It also pairs effortlessly with charcuterie boards and cheese platters. Foxbury Fields Bacchus is a pale lime green aromatic dry white wine. The wine offers complex aromas of elderflower layered with Kiwi, grass and a herbal overlay. Well balanced with length on the palate this is a classic English Bacchus.
Created in 1933 by viticulturalist Peter Morio by crossing Silvaner x Riesling with Muller-Thurgau varieties to create a grape that produces a fine white wine. Originating in Germany, Bacchus has increasingly been grown in the United Kingdom. The climate being colder means the grapes tend to have increased levels of acidity compared to their German counterparts, giving a new flavour take on a classic German grape by keeping the flavor from becoming too intense or sugary.

Cielo e Terra has dual roots in the Veneto region: the Cielo family and the winemakers of the Cantine dei Colli Berici. The Cielo family’s bond with the land dates back to 1908 in the Vicenza countryside, near the Castles of Romeo and Juliet, where the great-grandfather had bought Casa Defrà, a small farm with a vineyard. They enjoy making wines with passion and innovation to create signature versions of traditional Italian wines, looking for the right balance between personality and easy-drinking.
This wine displays a light straw yellow colour, hinting at its bright and refreshing character. The nose is fresh and fruity, with delicate aromas of wildflowers and fresh fruit that create an inviting bouquet. On the palate, it offers a crisp and well-balanced profile, marked by a subtle touch of minerality. Josef Chromy is one of Tasmania's most famous influential wine figures, having owned and developed some of the state's most prominent wineries, including Rochecombe (now Bay Of Fires), Jansz, Tamar Ridge and Heemskerk vineyards. In 2007 he established the winery that would bear his name, which quickly became one of Tasmania's leading wine producers.
A vibrant nose of zesty lemon, lime, and kaffir lime leaves, complemented by subtle hints of roasted fennel and bay leaves. On the palate, it’s juicy and refreshing, with lively acidity and a fresh, vibrant character.
