Wild Rose Sparkling Rosé captivates with its delicate wild-rose pink hue, exuding elegance and complexity. On the nose, vibrant aromas of ripe red berries intertwine with subtle floral nuances.
The palate is a delightful balance of freshness and bright fruit, with luscious notes of strawberries and raspberries complemented by a soft, creamy texture, a result of partial malolactic fermentation. This harmonious interplay concludes with a beautifully long, refined finish.
Aged for a minimum of 22 months on lees and rested an additional six months on cork post-disgorgement, this sparkling rosé demonstrates exceptional maturity and finesse.
Wild Rose shines alongside sashimi and maki rolls, enhanced by the salty tang of soy sauce and the zing of fresh ginger. It also pairs effortlessly with charcuterie boards and cheese platters. Cielo e Terra has dual roots in the Veneto region: the Cielo family and the winemakers of the Cantine dei Colli Berici. The Cielo family’s bond with the land dates back to 1908 in the Vicenza countryside, near the Castles of Romeo and Juliet, where the great-grandfather had bought Casa Defrà, a small farm with a vineyard. They enjoy making wines with passion and innovation to create signature versions of traditional Italian wines, looking for the right balance between personality and easy-drinking.
Dusty ruby colour. Earthy, minty, fruity aromas of mint, baking spice, meaty, and red fruit with a supple, vibrant, dry light body.

A pale onion skin crossed with white peach threaded with a persistent, fine mousse.
The nose shows ripe red berry fruits - wild strawberry and cherries - overlaid with heady summer florals all held in a soft and bready frame. The addition of the 2015 and 2016 reserve wines bring a further layer of complexity with toasted nuts and sweet spice.
Thanks to the long lees ageing it is rich and round on the palate, with notes of raspberry, cranberry and redcurrant held in a delightful creaminess, but the fresh acidity provides the perfect balance and leads to a refreshing but persistent and luxurious finish.

Our Bacchus wine comes from our oldest vines close to the winery. This small vineyard produces a limited release of just 650 bottles each year and in previous years has won the Trophy for the best Bacchus in the WineGB West region twice.
This 2023 wine was slowly fermented using the wild yeastfrom the grapes and has resulted in a fragrant aromatic Bacchus with a delicate elderflower nose and a soft citrus palate. It is perfect on it’s own or with lighter styles of food.
