We have teamed up with Silver Circle Distillery again this year to create Y Gwyllgi, a Pinot Noir Gin that uses the beautiful leftover skin, pulp and seeds from the winemaking process combined with the wild flavours of foraged Wye Valley botanicals.
Named after a mythical beast the Gwyllgi, gwyll “twilight” + ci “dog”, who is said to appear as a frightful apparition of a Black Wolf with baleful breath and blazing red eyes.

A harmony of flavours including baked red apple, lightly stewed summer fruits and rich butter that give the wine remarkable weight and structure. The edges of the profile are filled with stone fruits that lead to a morish finish of toast and sweet pastry.

It has a toasty savouriness with the well-judged intensity of pastry and biscuit never overwhelming the elegant fruit. On the palate it has wonderful concentration and acidic structure. New release! This is the latest release of our best-selling Rosé Brut from the successful 2022 vintage. This release is made exactly in exactly the same style - albeit a little lighter in appearance - from a blend of 50% Chardonnay and 50% Pinot Noir and having spent over 18 months on lees.
Pale salmon in colour with an abundance of fine bubbles, the wine has notes of strawberry, some blood orange, summer citrus freshness with a little creamy nougat on the nose. The freshness continues into the palate with some lightly bready notes and a little some summer fruit salad. Reminiscent of a summer day with the sun going down, this is the perfect aperitif or paired with with light starter dishes. ABV 12%.
