Antonin Guyon started buying vineyards in Gevrey-Chambertin and Meursault in the 1960s. A decade later, his son Dominique added 350 plots in the Hautes Côtes de Nuits. Today, Dominique and his daughter Hombeline, the fifth generation of the family, look after a domaine covering more than fifteen different appellations.
This vibrant, ruby-hued Pinot Noir offers a lifted bouquet of wild strawberry, red cherry, and rose petal, layered with subtle forest floor and gentle spice. the wine showcases purity of fruit and a bright, cool-climate character. On the palate, it is finely structured and crisp, with lively acidity and delicate, chalky tannins framing the red berry core. This wine is also Zero Dosage and crafted from selected hand-picked Chardonnay & Pinot Blanc grapes gently pressed to extract the highest quality cuvee juice. A portion of the juice underwent primary fermentation in large French new oak barrels with subsequent prolonged lees contact in barrel prior to blending.
After secondary fermentation this wine enjoyed 44 months or more on-lees maturation in bottle, all of which has helped to create a beautifully balanced and elegant Sussex sparkling wine with layers of complexity, great poise and length.
On the nose the wine offers aromas of pear, peach and apricot complimented by a touch of brioche.
