It has attractive floral aromas of acacia, elderflower and citrus blossom along with Sicilian lemons and chalky minerality.
The palate is crisp, dry and exceedingly refreshing with flavours of freshly squeezed lemons, grapefruit, lemongrass and salty minerality on the finish. It shows very pure varietal expression with exquisitely refined structure and definite poise.
Perfect for celebrations, serve well-chilled as an aperitif alongside shellfish canapés such as oysters, mussels or cockles. Great with flat fish such as lemon sole véronique, turbot, brill or dabs. Using the Charmat method, a production technique favoured by many Italian and German producers of quality sparkling wine, we were able to produce a different style of wine giving a more fruit driven, easy drinking and approachable style.

Intense dark ruby colour clean and crisp with the pure expressive terroir on the palate
Medium bodied with moderate tannins the wine is, silky and aromatic with notable freshness and a splash bouquet of summer red fruits predominantly strawberries and dry cranberry , orange rinds, and slightly spicey with a hint of warm vanilla toast and cream caramel with a long finish.
The tannins are still fresh but well balanced and this a wine that could be drunk now but will age well.
This wine pairs well with duck, beef bourguignon and roasted chicken as well as hard cheese.
