A sparkling wine of unparalleled elegance, Paragon Blanc de Blancs showcases the purest expression of Chardonnay from the Upper Levels vineyard. Made exclusively from premium clones (95, 121, 76, and 131), this limited release of just 3,535 bottles is a testament to meticulous craftsmanship.
On the nose, bright citrus aromas intertwine with delicate floral notes and a whisper of toasted almond, hinting at its partial oak cask aging (46%) alongside stainless steel (54%). The absence of malolactic fermentation preserves the vibrant acidity (8.8g/L), complemented by a touch of residual sugar (5.9g/L) that enhances the wine’s texture without compromising its finesse.
On the palate, Paragon is a symphony of precision and complexity. The wine delivers crisp green apple, lemon zest, and a chalky minerality, rounded by a subtle creaminess from oak influence. This award winning wine (Bronze Wine GB Awards) is made from grapes from the 2023 harvest this wine has just been released in August 2024. Comprising of Bacchus and Schonburger and very lightly oaked (20% in barrel).
This wine shows a more subtle and nuanced side to Bacchus. It has a harmonious bouquet of white peach and jasmine, with a light herbal verbena edge. On the palate it is fresh and crisp, with partial barrel and malolactic fermentation giving added texture and depth, ultimately delivering a long mineral finish.

Within an hour of harvesting the grapes are taken to our winemaker Will Davenport at the award winning Davenport's Vineyard and pressed on the same day to retain the natural flavours of the grapes.
Ortega is a German grape that is earlier to ripen and known for its low acidity. Medium bodied, zesty, crisp and fruity, it is a perfect aperitif or pairs well with seafood and spicy foods.
