A sparkling wine of unparalleled elegance, Paragon Blanc de Blancs showcases the purest expression of Chardonnay from the Upper Levels vineyard. Made exclusively from premium clones (95, 121, 76, and 131), this limited release of just 3,535 bottles is a testament to meticulous craftsmanship.
On the nose, bright citrus aromas intertwine with delicate floral notes and a whisper of toasted almond, hinting at its partial oak cask aging (46%) alongside stainless steel (54%). The absence of malolactic fermentation preserves the vibrant acidity (8.8g/L), complemented by a touch of residual sugar (5.9g/L) that enhances the wine’s texture without compromising its finesse.
On the palate, Paragon is a symphony of precision and complexity. The wine delivers crisp green apple, lemon zest, and a chalky minerality, rounded by a subtle creaminess from oak influence. The finish is long and refreshing, with a delicate interplay of fruit, acidity, and structure that invites another sip.

A beautiful, pale, shimmering gold, the 2014 Blanc de Blancs opens with aromas of freshly crushed ripe green apples, lemon zest, quince jelly and a gorgeous fresh ginger note. It has a toasty savouriness with the well-judged intensity of pastry and biscuit never overwhelming the elegant fruit. On the palate it has wonderful concentration and acidic structure. This Fino with average age of 5 years is aged following a biological aging in the cool and humid air of the port town of El Puerto de Santa María, where the flor grows in ideal environmental conditions. Pale straw colour, dry, light and smooth. This Fino is laced with scents of the sea and profound “flor” aromas. Clean and fresh, with a slight taste of tangy yeast.
