Although winemaking began in 1685, recent history begins with the Waibel family, who purchased the land in 1960. The wine is elegant, vibrant, and refined, with excellent fruit concentration and length. Extended lees contact and a touch of 2% Sémillon add depth and richness, balancing the crisp acidity. Made in a classic unwooded style, this Sauvignon Blanc is a delightful drink now, but it will evolve beautifully with 5 to 8 years of ageing under optimal cellaring conditions.
