The Cape Mentelle journey is a true labour of love, born from humble beginnings in 1970 with just sixteen hectares of vines. Fast forward to today, and this iconic winery has carefully crafted each blend to showcase the unique characteristics of its terroir, resulting in wines that are both complex and approachable.
This wine is a crafted blend of flavours and textures, showcasing the best of Margaret River Shiraz. This 16 Hectares Shiraz is a medium-bodied delight, with a rich array of dark fruit flavours, including red cherry, blackberry, and spiced plum. These flavours are beautifully complemented by layers of cedar and warm spice, adding depth and complexity to the wine. With its finely textured tannins and refreshing acidity, this wine is both elegant and refined. The gravelly soils of the Wallcliffe vineyard have imparted a subtle minerality, while the wild-yeast fermentation has added a touch of nuance. Small parcels of our home vineyard Chardonnay were carefully selected across three exceptional vintages and gently pressed in whole bunches. Predominantly barrel fermented in a combination of old and new, toasted
Burgundy and Loire oak barrels, a small selection of base wines also underwent malolactic conversion. Following secondary bottle fermentation in our naturally cool, underground cellars, our second-release Oak Reserve then spent 60 months on lees before disgorging, with six months on cork to complete its journey.

Foxbury Fields Bacchus is a pale lime green aromatic dry white wine. The wine offers complex aromas of elderflower layered with Kiwi, grass and a herbal overlay. Well balanced with length on the palate this is a classic English Bacchus.
Created in 1933 by viticulturalist Peter Morio by crossing Silvaner x Riesling with Muller-Thurgau varieties to create a grape that produces a fine white wine. Originating in Germany, Bacchus has increasingly been grown in the United Kingdom. The climate being colder means the grapes tend to have increased levels of acidity compared to their German counterparts, giving a new flavour take on a classic German grape by keeping the flavor from becoming too intense or sugary.

This grape produces dark blue grapes when ripened at the end of October giving the wine a slight blush appearance. By allowing the natural fermentation to extend to 30 months, the Pinot grape makes a very fine sparkling wine having a fruity aroma and spicy flavour. Crisp and dry.

Pelegrim means Pilgrim in middle English (circa 12th century) and recognises the history of our forbears who walked the Pilgrim's Way above our vineyard for centuries on their final leg to Canterbury.
Pelegrim NV is a traditional bottle-fermented sparkling wine that is made from Pinot Noir, Pinot Meunier and Chardonnay with reserve wines from previous vintages to give further complexity and a consistent extra dry non-vintage style. The wines are lees-aged in bottle for 36 months to give depth and biscuity aromas which only bottle-fermentation can deliver.
