The Ortega grapes are hand-harvested and transported to the winery where they are destemmed, crushed, and pressed. The ferment was tasted daily and stopped at desired residual sugar level by chilling and filtering. The yeast was specially selected and was a sweet wine yeast Zymaflore ST. This yeast is susceptible to cold shock, making it easy to stop the ferment.

Royal Sovereign was one of the most popular strawberry cultivars grown in Tamar Valley market gardens during the first half of the twentieth century.
