"Chilli" the cat stumbled across us on his travels during June 2021 and decided to adopt us and make Chiltern Valley his new home! We welcomed him with open arms and this very special black cat is loved, adored and spoilt rotten by all his humans!! During the summer months "Chilli" may join you in the court yard to enjoy some summer sun, a few cuddles and of course to see what delights you are enjoying from the on-site food truck! Every year to pay homage to this special lad we name a wine after him (which of course he chooses!!) and this year is his delicious "Chilli Cat Cuvee", cheers "Chilli".

Exton Park Cuveé M. Isaac ‘BBB’ Blanc de Blanc 2015 (6 Bottles) Southampton, Hampshire, England
UK MAINLAND SHIPPING INCLUDED
Dedicated to our late founder, the Cuvée M. Isaac Blanc de Blancs Vintage 2015 Barrel-aged Before Bottling – or the ‘BBB’ – is our next winemaking innovation.
Sourced exclusively from the estate’s oldest Chardonnay vines during the 2015 vintage, the BBB was fermented, kept and stirred in barrels over three years to better understand the effect that longer oak ageing would have on English sparkling wine.

UK MAINLAND SHIPPING INCLUDED
Our Pinot Rosé wine is now available to order. A truly delightful and refreshing summer wine!
Made entirely from our own grown Pinot varieties, this wine is a mix of 45% Pinot Noir (mix of clones), 40% Pinot Noir Precoce and 15% Pinot Meunier. With our warm summer of 2023 the result is an intoxicating aroma of red summer fruit produce.
On the mouth the first taste is distinctly of ripe raspberries and loganberries followed by pomegranate and perhaps some red currant. The wine leaves a smooth and rounded finish. This is well balanced and a delight to drink on a summer’s afternoon – with or without food!

UK MAINLAND SHIPPING INCLUDED
A full bodied style that is lifted and fresh. Baked apple, ripe lemon, peach blossom and brioche. Super delicious!
Raimes Demi Sec 92 points "A Charming beautifully poised demi-sec sparkler from Raimes of South Downs. Bruised apple over a savoury tone of yeast. Partial ageing in oak followed by 42 months on lees gave the 2017 vintage a concentrated, textured palate of red apple, brioche and umami... The well-balanced red fruit sweetness comes from 34 g/l of sugar offset by 10g/l of acid with more weight and hazelnuts on the finish. Moreish and long.
Henners Blanc de Blancs 2018 (6 Bottles) Herstmonceux, East Sussex, England

An intense and luxurious wine, both balanced and complex, with salivating salinity woven throughout. Citrus with a hint of honey, the buttery silkiness makes this a grand wine for the big occasions.
A real treat for those extra-special occasions. This Internationally recognised wine is perfect for when you are looking to spoil the company you are keeping. While of course it can be drunk on it's own, we'd recommend pairing with a posh meal to make it a night you won't forget.

Blend: 55% Pinot Noir, 31% Pinot Meunier, 14% Chardonnay
Wild Rose Sparkling Rosé captivates with its delicate wild-rose pink hue, exuding elegance and complexity. On the nose, vibrant aromas of ripe red berries intertwine with subtle floral nuances.
The palate is a delightful balance of freshness and bright fruit, with luscious notes of strawberries and raspberries complemented by a soft, creamy texture, a result of partial malolactic fermentation. This harmonious interplay concludes with a beautifully long, refined finish.
Aged for a minimum of 22 months on lees and rested an additional six months on cork post-disgorgement, this sparkling rosé demonstrates exceptional maturity and finesse.
Wild Rose shines alongside sashimi and maki rolls, enhanced by the salty tang of soy sauce and the zing of fresh ginger. It also pairs effortlessly with charcuterie boards and cheese platters. For a casual yet elevated option, try it with spicy lamb koftas, flatbreads, and a cooling burrata and tomato salad.
