Our Sauvignon Blanc has its own Characteristics. It is different to a French or New Zealand; it can only be described as wonderfully Cornish. Owned by Roger Zannier, Château Saint-Maur is one of the finest properties in Provence. A few kilometres from Saint-Tropez, Saint-Maur is one of only eighteen estates that have been awarded Cru Classé status in the region. The Clos de Capelune vineyard, on the heights of Collobrières, overlooks the Gulf of Saint-Tropez. At 449m of altitude, these are the highest vines in the Côtes de Provence appellation.

Winemaker's Notes: A dry, crisp and delicate rosé. The Pinot noir used to make this rosé was crushed and cold macerated for 14 hours to extract both colour and body. It then underwent fermentation 35% in American oak the remainder in stainless steel tank.

A small batch single vintage blend of our Phoenix and Seyval Blanc grown here at Little Waddon using pesticide free regenerative growing tehcniques.
Partially hand de-stemmed and foot crushed, left on skins before a wild fermentation.
Unfiltered and unfined with no sulphur added at any stage.
Tasting: Think of an English Summer day; a nose of elderflower, citrus fruit with a hint of peach, buttery toasted almonds and a well balanced acidity. Dry to off dry. Best served slightly chilled, and to let the wine fully open up don’t return it to the fridge.

This dry white sparkling wine is made from 70% Pinot Noir and 30% Chardonnay grapes hand-picked from our vineyard in October 2019.
It was made using the classic bottle fermentation method and has spent three years on the lees. It is pale gold in colour and displays a fine mousse.
It has a floral bouquet with grapefruit and lemon on the nose. Dry on the palate with delicate aromas of apple, white peach, lemon and lime and a nutty finish.
