An off-dry English sparkling wine with refined fruit character. It has a pale golden hue with a steady stream of tiny bubbles.
Floral aromas of almond blossom and honeysuckle dance on the nose, with fragrant stone fruits including yellow nectarine and quince. It has the scent of summer meadows alongside attractive aromas of freshly baked shortbread and sweet brioche. The palate is off-dry with honeyed fruit, sweet apple compote and stewed medlar. It has a wonderful creamy mousse and a silky texture as smooth as panna cotta.
There are hints of frangipane and bakewell tart with a tasty layer of sweet almond paste running through it. It has balancing acidity to counteract the sweetness so the result is exquisitely off-dry with a lingering finish.
Perfect for celebrations such as christenings or a baby shower, or simply enjoy it with afternoon tea. Serve well-chilled in a flute alongside sweet canapés such as mini strawberry short-cake or individual fruit tarts. Also good with creamy fruit desserts such as summer trifle or panna cotta with a red berry coulis. Deep Cherry red rose develops a splash of fruits and flavours of cherries and blackberries, herb, spice and dried Orange peel; it has refreshing strawberry aromas with notes of brioche , which become accentuated after time in the glass with a long fresh finish.
A blend of 50% Pinot Noir, 30% Chardonnay and 20% Pinot Meunier The grapes were pressed in a traditional Coquard press. After fermentation the base wines were kept separate and remained on their gross yeast lees over winter to develop additional complexity and richness. The base wines did not go through malolactic fermentation. Bottled in May 2016 the Rose was disgorged on September 2021 and has spent 63 months on the lees.
