The Nightjar reserve pinot noir is made using grapes sourced from Clayhill Vineyard in Essex. The wine is matured for a total of 36 months prior to release, 24 in barrel and 12 in bottle, gaining texture and complexity allowing the potential of this wine to shine through. The pinot noir has an essence of refinement that shows the longer term ageing potential of our wines.

A whole berry ferment with 50% whole bunches included, aged in large oak vats for 9 months and then has a further 12 months maturing in the bottle.

During the early years, Bodegas Lustau operated as an ‘Almacenista’. The Lustau family began bottling their own sherries and exporting by 1950. Aged following an oxidative ageing for 12 years in Bodega La Campana in Jerez de la Frontera. Dark bronze colour with golden rim. Pungent nutty aromas with a smoky wood background. Harvested from our vineyard in Wiltshire, this wine pairs perfectly with duck and lamb, or simply enjoy on its own. We recommend to serve this wine on the colder side of room temperature. Some English red wines offer a better taste when served chilled and this wine is no exception to that. However, if you prefer your wine wines on the warmer side this wine can do either.

Wine is emotion. And every release of The Trouble with Dreams is emotional.
More than twelve years after what should have been the inaugural vintage of The Trouble with Dreams – from the vineyard that Dermot initially planted to make wine for the monastic order of Catholic priests at Storrington Priory – the 2020 vintage marks a new and significant development we could not be happier about.
The hopes of the 2008 vintage were dashed when virtually all the grapes were devoured overnight by birds ("That's the trouble with dreams", Father Paul McMahon demurred). However, exactly 10 miles west of Storrington a larger site of older vines on extremely chalky ground proffered their second crop... Coldharbour Vineyard has now featured in all of our vintages since 2019, and it's a vineyard that we have farmed ourselves since 2023.
Around a decade ago, the first Trouble with Dreams vintages went on sale – the 2009, 2010, and 2011 rapidly gaining critical acclaim as among the best sparkling wines in the UK. Every subsequent vintage has had big shoes to fill, and we’re delighted to say the 2020 lives up to expectations – while there's still mineral geology at its core, there's a little more richness to the fruit.
