As ever we have produced a single vintage, single vineyard single varietal but here is our first non-rosé sparkling wine.

Back in our cellars once more following on from successful 2018 & 2020 vintages. This Rondo and Regent blend has been fermented on skins for three weeks and pressed into tank; before transferred into barrel. Individual Regent and Rondo barrels were selected to create this 50:50 blend.
Subtle oak notes on the nose merge well with black forest fruits and floral notes. A richer, darker palate than the single variety Regent yet a softer, smoother finish. 11.5%

Pink grapefruit and sweet marshmallow on the palate, bring a balanced and highly drinkable quality to this English sparkling wine. With just a touch of oak ageing, it has a delightful creaminess, that effortlessly complements a variety of cuisines.
This wine is a favourite within our Sparkling Range, as well as a team favourite here at Hattingley Valley (it even turned our owner Simon into a Rosé drinker!).
Suggested pairing with afternoon tea, with scones jam and cream (in that order!) or to start your meal, pair it with parma ham and other charcuterie.

Pelegrim means Pilgrim in middle English (circa 12th century) and recognises the history of our forbears who walked the Pilgrim's Way above our vineyard for centuries on their final leg to Canterbury.
Pelegrim NV is a traditional bottle-fermented sparkling wine that is made from Pinot Noir, Pinot Meunier and Chardonnay with reserve wines from previous vintages to give further complexity and a consistent extra dry non-vintage style. The wines are lees-aged in bottle for 36 months to give depth and biscuity aromas which only bottle-fermentation can deliver.

Robbing Red Breast is a beautiful red wine produced from Rondo Red grapes. Champagne Gaston Chiquet has been passed down through eight generations since 1746, when Nicolas Chiquet planted his first vines. It was brothers Fernand and Gaston who, in 1919, made the bold decision to keep their grapes and producer their own wine. Since 2003, this property has been in the very capable hands of brothers Antoine and Nicolas Chiquet. Together with Marion (Antoine’s daughter) they work 23 hectares of vineyards in Dizy, Aÿ, Mareuil-sur-Aÿ and Hautvillers.
Golden yellow hue, fine mousse. Fresh nose of dried fruit (apricot) with a hint of citrus. Smooth palate (Meunier); fresh, balanced and fruity (fresh apricot, white peach, citrus); aromatic finish.
