A blend of 60.5% Pinot Noir, 37% Chardonnay and 2.5% Pinot Meunier, made in the Saignée method, this intensely coloured wine is bled off following contact with the skins. Saignée sparkling rosés often have deep colours and powerful, complex flavour profiles.
The nose immediately draws you in, with wild strawberries and macerated red berry flavours that recall the very ripest red berries of the summer. There are also hints of cherry shortbread and winter spice.

Owned by Roger Zannier, Château Saint-Maur is one of the finest properties in Provence. A few kilometres from Saint-Tropez, Saint-Maur is one of only eighteen estates that have been awarded Cru Classé status in the region. The Clos de Capelune vineyard, on the heights of Collobrières, overlooks the Gulf of Saint-Tropez. At 449m of altitude, these are the highest vines in the Côtes de Provence appellation.

Cielo e Terra has dual roots in the Veneto region: the Cielo family and the winemakers of the Cantine dei Colli Berici. The Cielo family’s bond with the land dates back to 1908 in the Vicenza countryside, near the Castles of Romeo and Juliet, where the great-grandfather had bought Casa Defrà, a small farm with a vineyard. They enjoy making wines with passion and innovation to create signature versions of traditional Italian wines, looking for the right balance between personality and easy-drinking.
This wine reveals a delicate light pink hue, reflecting its fresh and vibrant character. The bouquet is lively and persistent, offering inviting fruity aromas with notes of pineapple and strawberry. Created from a blend of our best grapes, specially blended to complement Thai Green Curry or other exotic dishes as well as rich creamy chicken plates. An aromatic wine with essences of tropical fruits on the nose, followed by a warm balanced palate bursting with melon, sweet grapefruit and a hint of pineapple. A gentle underlying acidity and minerality sustains a seductive finish.
This is delicious with Turkey and also pairs well with spicier foods like a Thai green curry.

The Ortega grapes are hand-harvested and transported to the winery where they are destemmed, crushed, and pressed. The ferment was tasted daily and stopped at desired residual sugar level by chilling and filtering. The yeast was specially selected and was a sweet wine yeast Zymaflore ST. This yeast is susceptible to cold shock, making it easy to stop the ferment.
An aromatic medium sweet wine, well balanced with uplifting aromas of peach, gooseberry and elderflower.
