The wine presents a generous bouquet of stone fruit notes white peach and honeysuckle with fresh citrus bursts. These delicate notes are brought together to create a wine with great clarity, a unifying minerality and slight viscosity. Pair with white fish, dishes with creamy sauces and fresh salads.
100% Pinot Gris from an Alsatian grape varietal, the grapes were pressed in early October. After low
temperature fermentation the wine was left in tank over winter but not allowed to go through
malolactic fermentation to preserve the fresh acidity.

Josef Chromy is one of Tasmania's most famous influential wine figures, having owned and developed some of the state's most prominent wineries, including Rochecombe (now Bay Of Fires), Jansz, Tamar Ridge and Heemskerk vineyards. In 2007 he established the winery that would bear his name, which quickly became one of Tasmania's leading wine producers.
A vibrant nose of zesty lemon, lime, and kaffir lime leaves, complemented by subtle hints of roasted fennel and bay leaves. On the palate, it’s juicy and refreshing, with lively acidity and a fresh, vibrant character. This classic cuvée of Pinot Noir, Chardonnay and Pinot Meunier has all the hallmarks of a fine sparkling wine. Subtle fruit on the nose, predominately red berries from the Pinot, a little light citrus from the Chardonnay, and a hint of peach is backed up by a really long, mouth-filling palate that lingers and satisfies. Fresh and lively, the ripe acidity is complimented by a subtle sweetness, which pleases the senses.

The Fernández family were grocers in Madrid when they decided to set this biodynamic estate up from scratch. Their objective was always to make accessible, easy to drink biodynamic wines and what they’ve achieved in 10 years is nothing short of impressive. High on a gently rolling plateau they built a purpose made winery cleverly laid out to facilitate collecting the grapes and making and storing the wine as efficiently as possible. The 100 hectares of vineyards are planted with many varieties but their Syrah, Tempranillo, Chardonnay and Viognier really stick out.
This Sauvignon Blanc is robust and bold. It has aromas of tropical fruit, bruised apple, brazil nut and dried orange rind. This amber wine is at the cross roads of a red wine for its tannins and a white wine for its good acidity.

Lyme Bay Chardonnay 2021 (6 Bottles) Axminster, Devon, England

Fermented in a mixture of stainless steel and oak at cool temperatures using selected Burgundy yeast strains to enhance complexity, stone fruit, floral characters and minerality. Post-fermentation there was full malolactic fermentation and extended fine lees ageing with some bâtonnage to accentuate the natural weight.
A late dry spell in 2021 allowed us to hang the fruit for as long as possible to ensure we attained peak physiological ripeness for our house style. The Chardonnay 2021 is a blend of aromatic and non-aromatic chardonnay fruit sourced from a collection of growers in Essex where the microclimate and soil allow the grapes to achieve excellent ripeness, harvested between 31st October and 7th November 2021.
