A very special traditional method English sparkling wine made from our own Pinot Noir grapes skilfully combined with a carefully selected local Chardonnay, Pinot Meunier and Pinot Noir mix.
2018 was an exceptional growing year in the UK with a super hot summer which delivered grapes bursting with juicy ripeness.
Our Reserve Cuvée has fresh and intense citrus aromas, supported by notes of ripe fruit and the slightest hint of oak. A touch of biscuity honey with a creamy finish completes the tasting journey.
Aged on the lees for at least 24 months. Excellent with lobster lasagne, seafood or enjoyed on its own.

From the 2022 harvest at our West Ashling vineyard, this wine opens with an inviting bouquet of local watercress beds, complemented by notes of toasty cashews, cool cinders, and ripe greengage plum.
On the palate, it delivers a delicate interplay of fresh acidity, reminiscent of crunchy nectarine, balanced by a subtle coastal salinity. The finish lingers gracefully, enhanced by a creamy softness imparted by a touch of time in the barrel.

During the early years, Bodegas Lustau operated as an ‘Almacenista’. The Lustau family began bottling their own sherries and exporting by 1950. In the 1980s they expanded their range and introduced the Almacenista range concept of buying and maturing casks from small bodegas to share excellent quality names and styles with enthusiasts around the world. The Lustau Vermut Rojo NV is a stunning representation of the traditional Spanish vermouth, showcasing the unique and complex flavours of Jerez. With passion and purpose Red Hut was launched and embodies the spirit of New Zealand, they are inspired by the iconic red huts that shelter adventurers. The 2025 Red Hut Pinot Gris from Marlborough's Awatere valley is a vibrant and finely detailed expression of the variety. Aromas of freshly cut pear, lemon zest and white blossom lead into a palate that is both bright and textural. Our elegant, dry and complex 2015 Sparkling Classic Cuvée benefitted from a dry summer and warm September, helping to ripen the traditional Champagne varieties used in this blend.
The tension and ripe citrus fruits of this dry sparkling wine works particularly well with Thai inspired recipes. The roundness and subtle mouthfeel of the wine is a treat to match with noble fish and seafood such as gurnard, bass or scallops.

Cuvée Boz – 100% Chardonnay – is from Coldharbour Vineyard in West Sussex, planted in 2005 on chalk and flint soil. Vinified in stainless steel and without any oak ageing, it shows remarkable clarity and freshness that shines through its flinty minerality and a long, toasty finish.
Lyme Bay Chardonnay 2021 (6 Bottles) Axminster, Devon, England

Fermented in a mixture of stainless steel and oak at cool temperatures using selected Burgundy yeast strains to enhance complexity, stone fruit, floral characters and minerality. Post-fermentation there was full malolactic fermentation and extended fine lees ageing with some bâtonnage to accentuate the natural weight.
A late dry spell in 2021 allowed us to hang the fruit for as long as possible to ensure we attained peak physiological ripeness for our house style. The Chardonnay 2021 is a blend of aromatic and non-aromatic chardonnay fruit sourced from a collection of growers in Essex where the microclimate and soil allow the grapes to achieve excellent ripeness, harvested between 31st October and 7th November 2021.
