Our limited-release Sparkling Red Reserve is made from the finest hand-picked pinot grapes, fermented on their skins. A blend of 60.5% Pinot Noir, 37% Chardonnay and 2.5% Pinot Meunier, made in the Saignée method, this intensely coloured wine is bled off following contact with the skins. Saignée sparkling rosés often have deep colours and powerful, complex flavour profiles.
The nose immediately draws you in, with wild strawberries and macerated red berry flavours that recall the very ripest red berries of the summer. There are also hints of cherry shortbread and winter spice.

This blend replaces our highly successful Ditchling Reserve. Using Chardonnay, Pinot Noir, Pinot Meunier and Pinot Noir Précoce, the wine has been longer in reserve and a large proportion has been barrel aged before bottling. Long aging on the lees has ensured a rich, but still fruity balance. Also awarded a gold medal at the 2021 International Wines & Spirits Competition; the judges commented “Stunning nose of honeycomb, bruised apple and brioche – like a fine dessert with apple four ways. It has lovely poise, classy and complex all held in perfect poise by the bright quintessentially English acidity”.

This is our second release of sparkling rosé. Pressed, fermented, and bottled at Offbeat Wines by Daniel Ham, our winemaker. The grapes were hand-harvested and a whole bunch pressed. The wine underwent secondary fermentation in the bottle and then spent 18 months on its yeast lees and a further 6 months ‘on cork’. Released June 2023. This is a 100% pinot-based rosé — a departure from our first which contained a blend of chardonnay and pinot.
