Josef Chromy is one of Tasmania's most famous influential wine figures, having owned and developed some of the state's most prominent wineries, including Rochecombe (now Bay Of Fires), Jansz, Tamar Ridge and Heemskerk vineyards. In 2007 he established the winery that would bear his name, which quickly became one of Tasmania's leading wine producers.
The Pinot Noir 2023 showcases an abundance of deep red berry fruits, accompanied by notes of cinnamon spice and subtle oak toast. On the palate, it delivers a rich and generous experience with dark red fruits, supple tannins, and a smooth, lingering finish.

This single variety is our second Regent since our 2019 vintage – and is worth the wait.
Fermented on skins for three weeks and aged in a mix of both new and aged American and Hungarian oak barrels for twelve months. Aromas of vanilla, cinnamon and hints of white pepper spice. Our ever-popular Pet Nat is back! A purely natural wine, fermented by natural yeasts with no added sulphites. It is a light, refreshing, slightly cloudy sparkling wine and is absolutely the perfect summer drink. We bottled during harvest while the wine was still frementing, keeping a light fizz in the bottle. It has a slight yeast sediment adding a great yeasty edge to the fruit aromas. The wine will gain yeasty aromas as it ages.
This is a natural wine in every way and is difficult to make, so we only use the best grapes available to us that we know will end up with the right flavours and balance in the wine.

Jérémie Huchet is a fourth-generation winemaker making his mark in Muscadet. Having taken over the family estate in 2001, Jérémie immediately went about purchasing some fantastic vineyards (which now total 64 hectares), and is slowly converting everything to organic viticulture. His white and red Chapeau wines are young wines meant for easy pleasure, while the clean, mineral L`Innatendu Muscadet is an excellent introduction to Jérémie`s vineyards and winemaking style.
The Chapeau Melon Rouge presents a light cherry colour with a nose of ripe red fruits. This dry red wine reveals a pleasant freshness with light tannins. The palate is gourmet, smooth and fruity.

A vibrant English sparkling wine with bright citrus notes and crisp freshness. It has a medium lemon colour and fine delicate bubbles. Attractive aromas of acacia blossom and lemon peel mingle with orchard fruits, including green apple and ripe pear plus mild brioche and subtle notes of pastry. On the palate it is deliciously crisp and dry with zest acidity and a lively mousse. Citrus flavours of lemon and yuzu marry greengage and mirabelle plum alongside exotic hints of kumquat and cashew nut. It shows a wonderful purity and saline minerality with a tangy finish.
Serve this dry, sparkling wine well-chilled in a flute as an aperitif. Pair it with canapés including smoked salmon blinis or fish goujons. Enjoy it with Japanese sushi amnd sashimi. Also good with Scandinavian-inspired dishes such as pickled herring or soused mackerel or mild fusion flavours such as yuzu and sea bass ceviche, or thai-style mussels.
