This is our Little Waddon Vineyard sparkling pink Col Fondo ‘Rosa’ 2022 Col Fondo is an Italian ancestral method semi-sparkling wine made by creating a second fermentation in bottle ‘Con il Fondo’ translates literally as ‘with the bottom’ – meaning sediment or lees is present.
This is all part of the wine style and adds an interesting complexity and mouth feel
Part skin contact, hand de-stemmed and foot crushed single estate Phoenix and Seyval Blanc grapes grown here on our vineyard on the Jurassic Coast First wild fermentation, followed by malolactic fermentation, cold curing over winter, and then second fermentation in bottle
A low intervention wine giving frizzante ‘little bubbles’ Raspberry and apple hedgerow, a hint of nutmeg & brioche, well balanced acidity with an elderflower finish

This exquisite rosé is crafted primarily from Pinot Noir clone 777 (98%), complemented by a touch of Pinot Meunier (2%). Childhood friends Christian Collovray and Jean-Luc Terrier each grew up in a family of winemakers and shared a bond from a young age. Following the success of Domaine des Deux Roches, in 1997 Christian and Jean-Luc branched out from Mâcon and purchased land in the southwest of the Languedoc in Limoux. This site benefits from an elevation of up to 500 meters, thereby moderating the Mediterranean climate. The shallow, limestone-based soils are ideal for Pinot Noir and Chardonnay.
Hailing from the high-altitude vineyards of the Vallée de l’Aude in the Languedoc, this wine takes its name—Turitelles—from the distinctive cone-shaped marine fossils scattered throughout the soils, lending a vibrant, mineral-driven edge. On the palate, it bursts with crunchy red berries and juicy peach, finishing with an ultra-light, refreshing crispness.
