The East of England has an increasingly suitable climate for sparkling wine production and English Quality Sparkling Wine is rapidly gaining international recognition, praise and awards. At the Wine GB East 2022 Awards, Dedham Vale Vineyard 2018 Sparkling Brut was awarded a Silver Medal in recognition of its outstanding quality.
This Brut Sparkling wine is made using the methode champenoise. It has spent time on its lees generating a refreshing lively mousse (the French term for the bubbles that rise to the top of a sparkling wine), good depth on the palate with attractive fresh fruit flavours and yeasty overtones.
Pristine with persistent bubbles and cream texture. Toast and citrus fruit with balsamic notes. Very long fresh gooseberry finish.

Gardner Street has the classic floral, elderflower note we have come to know of contemporary Bacchus, married with a touch of ripe stone fruit from the barrel fermented Chardonnay.
Sourced from vineyard partners in Essex and Kent we harvested the vineyard parcels separately and fermented as small lots to allow the expression of their respective sites to shine through. 30% of the blend was fermented in neutral 300L French oak barrels and
allowed to go through malolactic fermentation, while the remaining parcels were fermented at cool temperatures in stainless steel and did not go through malolactic fermentation.

The Rondo is whole bunch pressed and fermented in Stainless Steel tanks to preserve the rich berry fruits. The Pinot Noir and Chardonnay are whole bunch pressed and aged in French oak 225L barrels to add smooth structure and body. A blend of 60.5% Pinot Noir, 37% Chardonnay and 2.5% Pinot Meunier, made in the Saignée method, this intensely coloured wine is bled off following contact with the skins. Saignée sparkling rosés often have deep colours and powerful, complex flavour profiles.
The nose immediately draws you in, with wild strawberries and macerated red berry flavours that recall the very ripest red berries of the summer. There are also hints of cherry shortbread and winter spice.
