Biddenden's sandy loam over clay soil coupled with modern winemaking techniques, all help to produce this exclusive, single varietal sweet fruity wine.
Light blush in color, this sweet wine is made with late harvest grapes which have been left on the vine to develop higher natural sugars. Flavors of honey, lychee and elderflower adorn this lusciously rich white wine. Schönburger grapes grow particularly well in the UK, because of our maritime climate.
The grapes are pale and plum colored, and have a very high sugar content. With good acidity they produce a very fruity full flavored wine.

Ashdown Boundary Block is made from 100% Merlot grapes. Aged in old oak barrels for 19 months. Light to medium bodied with a ruby to garnet hue. On the nose aromas of plum, blackcurrant, blackberry, almond, rhubarb, Cherry Bakewell and vanilla leading to flavors of cooked cherries, black currant jam, vanilla, cranberries and blackberries.
It is smooth with a good length. Its tannin structure is well balanced and delicate, while still delivering an intense and complex taste. A single variety, single vineyard wine that is produced in very limited quantities. On site at Melbury Vale Vineyard we have 500 established Seyval Blanc vines. Seyval blanc as a grape is ideal for the Dorset climate in that it is low maintenance and ripens beautifully. Come harvest, the bunches of grapes are large and have sugar levels perfectly aligned for producing traditional method sparkling wine. This wine is a pale golden color with fine bubbles typical of a high quality English sparkling wine. On the nose there are aromas of fresh citrus and ripe pear, and on the palate there are bright notes of green apple, elderflower, and meyer lemon.

Taking inspiration from the great rosé wines of Bandol, Rioja, and Corsica, Ana and I wanted to craft a dry English rosé that was deep in colour and character – the antithesis to the ubiquitous, industrially-made, and flavourless pale pink wines of a certain corner of France – but not lacking in refreshment.
So we blended barrels of perfectly ripe, gently macerated Pinot Noir and Pinot Meunier grown across all our vineyards during the incandescent 2023 vintage – a fabulous year for viticulture in the south of England.
Showing an elegant red berry character and beautifully supple texture, Dear Noodles crackles with energy and juicy acidity on its bone-dry finish.
