Our elegant, dry and complex 2015 Sparkling Classic Cuvée benefitted from a dry summer and warm September, helping to ripen the traditional Champagne varieties used in this blend.
The tension and ripe citrus fruits of this dry sparkling wine works particularly well with Thai inspired recipes. The roundness and subtle mouthfeel of the wine is a treat to match with noble fish and seafood such as gurnard, bass or scallops.

A fabulous sparkling Blanc de Noirs with great depth of flavour.
The colour is lemon gold with a fine stream of tiny bubbles. Floral aromas of white iris & peony marry stone fruit and cherry on the nose with the mildest touch of vanilla and hazelnut.
The palate is fruit-driven with yellow peach, ripe quince and notes of medlar apple. It has exceptional balance and a persistent mousse with lingering citrus flavours alongside a lovely nutty, pistachio and almond finish.
Excellent served chilled with seafood crustaceans such as Dublin Bay prawns, langoustines or lobster.
Also good with tuna or swordfish. Try it with monkfish wrapped in parma ham. Pairs well with cold meats and mild charcuterie or terrines such as chicken and rabbit terrine. Perfect with beef carpaccio..

Bluebell Hindleap Barrel Aged Blanc de Blancs 2017 (6 Bottles) Furners Green, East Sussex, England

Ashdown Boundary Block is made from 100% Merlot grapes. Aged in old oak barrels for 19 months. Light to medium bodied with a ruby to garnet hue. On the nose aromas of plum, blackcurrant, blackberry, almond, rhubarb, Cherry Bakewell and vanilla leading to flavors of cooked cherries, black currant jam, vanilla, cranberries and blackberries.
It is smooth with a good length. Its tannin structure is well balanced and delicate, while still delivering an intense and complex taste. Enjoy this wine with roast beef, mushroom risotto, or game dishes. Well-balanced acidity and medium body create a crisp, lively texture that carries to a refreshing finish. This sweet vermouth has been hand-crafted from distilled Sauvignon wine, blended with Pinot Noir and carefully selected botanical infusions of herbs, spices and citrus peel.
Beautifully bitter wormwood aromas are intertwined with dark notes of cacao and coffee, creamy undertones of vanilla, earthy rooibos tea leaves, and sweetness from caramelised Albury honey. Jérémie Huchet is a fourth-generation winemaker making his mark in Muscadet. Having taken over the family estate in 2001, Jérémie immediately went about purchasing some fantastic vineyards (which now total 64 hectares), and is slowly converting everything to organic viticulture. His white and red Chapeau wines are young wines meant for easy pleasure, while the clean, mineral L`Innatendu Muscadet is an excellent introduction to Jérémie`s vineyards and winemaking style.
The Chapeau Melon Rouge presents a light cherry colour with a nose of ripe red fruits. This dry red wine reveals a pleasant freshness with light tannins. The palate is gourmet, smooth and fruity.
