The name Old Oaks pays homage to the ancient oak tree that stands sentinel by our Doehole vineyard, symbolizing our commitment to sustainability. This sweet vermouth has been hand-crafted from distilled Sauvignon wine, blended with Pinot Noir and carefully selected botanical infusions of herbs, spices and citrus peel.
Beautifully bitter wormwood aromas are intertwined with dark notes of cacao and coffee, creamy undertones of vanilla, earthy rooibos tea leaves, and sweetness from caramelised Albury honey. A warming melange of spices including cassia bark, orange peel, nutmeg and ginger are underpinned by herbal flavours of honeybush leaf, lemon balm and meadowsweet for added complexity.

Everflyht Blanc de Noirs 2020 is a blend of Pinot Noir and Meunière; hand-picked from our single estate vineyard. The grapes are handcrafted in the winery to produce a wine that tells the story of not just the vintage but of the varietals as well. This traditional method wine has been aged on the lees for 33 months. The wine has a delicate golden straw colour and is complex in style with a fruit forward profile of ripe strawberries giving way to complex buttery pastry notes with a lasting warm finish of spice.
