Foxbury Fields Bacchus is a pale lime green aromatic dry white wine. The wine offers complex aromas of elderflower layered with Kiwi, grass and a herbal overlay. Well balanced with length on the palate this is a classic English Bacchus.
Created in 1933 by viticulturalist Peter Morio by crossing Silvaner x Riesling with Muller-Thurgau varieties to create a grape that produces a fine white wine. Originating in Germany, Bacchus has increasingly been grown in the United Kingdom. The climate being colder means the grapes tend to have increased levels of acidity compared to their German counterparts, giving a new flavour take on a classic German grape by keeping the flavor from becoming too intense or sugary.

The wine spends at least 2 years ageing on lees in the bottle before riddling and disgorging.

Cielo e Terra has dual roots in the Veneto region: the Cielo family and the winemakers of the Cantine dei Colli Berici. The Cielo family’s bond with the land dates back to 1908 in the Vicenza countryside, near the Castles of Romeo and Juliet, where the great-grandfather had bought Casa Defrà, a small farm with a vineyard. They enjoy making wines with passion and innovation to create signature versions of traditional Italian wines, looking for the right balance between personality and easy-drinking.
This wine reveals a delicate light pink hue, reflecting its fresh and vibrant character. The bouquet is lively and persistent, offering inviting fruity aromas with notes of pineapple and strawberry. A pale red Pinot Noir, the colour is deceptive, not revealing the powerful red fruits hidden within. Full of wild red fruit characters on the nose, the palate is soft, with intense red cherry and gentle spice from the time spent on oak. The perfect red for summer, ideal with a BBQ.
Winemaker's Notes: Just the ripest Pinot Noir was used for this light red. The grapes were crushed and fermented partly in tank and partly in barrel. Throughout the ferment regular pump overs were conducted to extract a little more colour and weight. The oaked proportion of the blend then spent a further 12 months in oak before being bottled.
