A sparkling wine of unparalleled elegance, Paragon Blanc de Blancs showcases the purest expression of Chardonnay from the Upper Levels vineyard. Made exclusively from premium clones (95, 121, 76, and 131), this limited release of just 3,535 bottles is a testament to meticulous craftsmanship.
On the nose, bright citrus aromas intertwine with delicate floral notes and a whisper of toasted almond, hinting at its partial oak cask aging (46%) alongside stainless steel (54%). The absence of malolactic fermentation preserves the vibrant acidity (8.8g/L), complemented by a touch of residual sugar (5.9g/L) that enhances the wine’s texture without compromising its finesse.
On the palate, Paragon is a symphony of precision and complexity. The wine delivers crisp green apple, lemon zest, and a chalky minerality, rounded by a subtle creaminess from oak influence. Olivier comanaged Domaine Leflaive with his uncle Vincent through the 1980s and then with his cousin Anne-Claude in the early 1990s. It was at this time that he established Olivier Leflaive Frères. Olivier Leflaive has since acquired an enviable 15 hectares of vines across Puligny, Chassagne and Meursault.
